[REQUEST] Sri Lankan Chicken Curry

My late father-in-law made the most amazing Sri Lankan chicken curry, using dark roasted curry powder. I’ve tried to replicate his many times but it never turns out right, usually the colour is a bit off. Before he passed away, he let me watch and write while he cooked, but he didn’t measure so it was a bit hard to record accurately.

If anyone has a great recipe they could share, I’d appreciate it! Otherwise, tips/corrections to what I’ve written below would also help.

Directions 1. Skin and cut 4kg Maryland chicken, put in marinading bowl. Wash with vinegar and drain and rinse the meat.

  1. Spread meat evenly and salt

  2. Add ground cumin, fennel and coriander, otherwise use singhala curry powder (unroasted)

  3. Add chilli powder to cover and dark roasted curry powder

  4. Add juice of 1/2 lime or lemon

  5. Oil pan and fry a chopped onion

  6. Add chicken and coconut milk, cover and cook
