A few months ago I baked a couple pumpkins. We made pumpkin soup out of one and scooped the flesh out of the other, let it cool, and froze it. Well, here we are (in the middle of pandemic with a shelter in place order) and I have no idea what to do with over two quarts of frozen baked pumpkin and was hoping someone here may be able to inspire some ideas. I've taken a walk down google lane, but haven't found anything that sparked my interest as of yet. When we baked it, we cut the pumpkin in half, lightly salted the tops and baked. When we tasted it, it was much more squashy tasting than the other pumpkin which is the reason we made pumpkin soup out of the more pumpkin tasting one. I appreciate any help.
