There is a small cafe on my street that is owned by French Algerians, they love their cooking and their baking. Their cheesecakes are some of the best along with their panini and baguettes. There is another dish they do which they simply call a "platter", it's an assortment of different vegetables including thinly sliced carrots, string beans, broccoli and sometimes dark chickpeas and roasted potatoes. These are usually served with a grilled chicken breast or a fish such as cod or sea-bass.
They are secretive about their recipe for the platter, especially the vegetables, they are some of the best I have tasted, perfectly cooked and tasty although the flavours seem to be simple. My question is how do they cook them? I've asked them multiple times but they are reluctant, although once he slipped some of it out, he told me they first steam the vegetables and then they gently wok them. He didn't go into any other detail such the kind of seasoning or other ingredients they use.
My question is, is anyone familiar with this recipe? anyone who is French or perhaps has a strong knowledge of French cuisine ever come across such a recipe? please do let me know.
