I would love some feedback on this recipe, and see if anyone else thinks it would be good. It was very quick to make, and me and my girlfriend loved it. It's probably the first recipe I have made that is worth writing down. The only thing we didn't like was that it had a lot of bitter flavors, and needed something sweet. I think I might replace the bell pepper with an orange or something else sweeter to cut down on the spice, since arugula is already pretty peppery.
Ingredients
- Arugula leaves
- 1x avocado
- 1x lemon
- 1x radish
- 1x sweet bell pepper
- Olive oil
- 1x can sardines
- Black pepper
Directions
- Combine avocado, 5 tbsp olive oil, the juice from one lemon, and black pepper in a blender. Liquify until smooth and uniform. Add olive oil to achieve desired texture.
- Thinly slice the radish, so slices are translucent
- Cut and seed the bell pepper.
- Break down sardines into bite-sized chunks.
- Combine arugula, radishes, bell pepper, and sardines in a bowl. Drizzle with avocado dressing and serve.
