Title says it people! I just whipped up a batch of pancake batter and realized that I have never joined any cooking subreddits. Time to atone.
For my girlfriend and me Sunday lunches are for pancakes. I have spent 8 Sundays perfecting the recipe, but finally hit gold with the recipe below. It's my tried and tested (for about 6 years now) pancake recipe for Dutch style pancakes. They're larger and thinner than American pancakes, but thicker than French style crêpes. They can be made with hearty stuff like meats and vegetables, but the best combination (if you ask me) is bacon and maple syrup.
To yield 2 pancakes you need:
- 80 gr. regular flour
- 30 gr. of buckwheat flour
- 1 medium egg
- 200 ml. milk (whole milk works best and that can be pasteurized as well)
- little salt
- dash of oil
Multiply the recipe by the amount of pancakes you need. You can't make a single pancake, as you can't do half an egg.
Simply toss it in a bowl (dry first, wet later), give it a quick whisk and be done with it. Be sure to have your pan flaming hot and pour in a thin(ish) layer. Also, use butter in the pan and not oil. Solely using oil doesn't give the same crisp and full flavour.
ps. for a crêpe recipe use all regular flour, add a quarter teaspoon of baking powder and use sunflower oil. Pour a thinner layer of batter.
