Dairy free chicken potpie

posted in r/cooking as well but I wanted to make sure to get all the opinions I can.

One of my favorite things to make is chicken/turkey pot pie because a) my husband loves it, b) the people around me haven't heard of it and usually end up liking this "salty pie" (as in not a sweet pie. not that it's over salted) and c) I unknowingly entered a competition with another potpie maker.

The problem is that my husband found out he has a dairy allergy (not lactose intolerance for clarification) so no more potpie until I figure out a good recipe.

The hardest part is figuring out the flaky crust. So far, I have margarine, coconut oil, and duck fat (I definitely want to try adding a small portion of this) to use but I'm not sure of the proportions or better options.

As for the filling, I was thinking coconut milk because I've made a dish and covered the coconut taste before so I think it should be ok. Also, husband is allergic to peas so the only substitute I can think of is mushrooms but I feel like there may be something else I can try.

I would love to hear if you guys have better suggestions or can help me out with this. I've been trying to make dairy free versions of everything but this one is a bit intimidating because the original is so delicious.
