So, my wife and I recently moved houses and it's been very stressful for her to say the least because she worries about everything going perfectly. I want to cook her a great dish in response. She's vegetarian (although I'm not) and usually we just replace my protein with some commercially available soy protein normally. Instead, I would like to cook a complete vegetarian meal for her and I, preferably something that isn't centered around pasta or eggplant as that is what we normally would make.
She does eat cheese and eggs, so any advice would be welcome!
