How do you cook tasty green beans?

I grew up in the south where basically everything was covered in grease, butter, or both. Which tastes fantastic, but isn't super healthy for you. Most things I can convert to greaseless, butterless versions but green beans are my enemy. How can you cook them without bacon grease and make them not taste like green, rubbery butt?
