I was vegetarian for a long time but I'm starting to branch off into pescatarianism (vegetarian + fish). Since I was vegetarian I want to make sure I do the best I can cooking the fish to respect the fact that it was in fact an animal that was killed. However when looking for good recipes they are usually more "quick and easy salmon" for example.
I don't care if it takes all day to prepare, if it uses strange ingredients, or it uses difficult techniques I just want this fish to be the best it could be. What is your best fish based recipe?
