Bigus / Bigos

Bigus aka hunter's stew. Perfect, healthty, tasty stew of Polish origin. A camping food, used by most armies of Easern Europe. Not sure, is it good for hot places, like California, but Canadians would like it.

You need

  1. pork ham or pork bacon
  2. Smoked sausages or any other smoked meat
  3. (any other meat you like, it doean't matter)
  4. 1 onion
  5. 1 carrot
  6. 1 small head of cabbage or a can of sauerkraut. If you get sauerkraut, the taste will be perfect, with pure cabbage - just great. If you have both, use both
  7. A can of tomato paste
  8. A handful of prunes (dried plums)
  9. And DON'T FORGET about 2 tablespoons of sugar, or it will be too sour.

Pepper, sult and any spices you like (laurus or barbaris work great).

1 cup of cheap dry wine is optional.

All of other stuff is easy. You just take a huge frying pan or iron pot, put it on fire, add some oil (but you can fry on pork fat as well), add сhopped ingredients from 1 to 9 and fry them a bit before adding the next one.

At the end you add some meat broth (or just wanter + bouillon cube) and let it stew for half of hour on low fire (if you're doing it on bonfire just raise the boiler higher).

If you need to feed more people with it, just add roasted garlic and more meat broth. The tasty soup you'll get is called Shchi, a legendary Russian dish.

This food is good for a diet - fantastically tasty and feeling, but 70% of it is just cabbage. Good for countries with cold climate. And plenty of vitamine C (if you have sauerkraut).

Never bores with taste. Can be stored in the refrigerator for 3 days. It can be frozen and stored for weeks (taste only improves).

Also it's perfect appetiser for dark beer or vodka.
