I just came back from france and tried a trianon cake--it has layers of dacquoise, praline, chocolate mousse, and a chocolate glaze.
I'm a decent baker but my kitchen is absolutely tiny and I don't think it's realistic to make a 4 layer cake here. But i love the mix of crunch and mousse, the nut/chocolate flavors.
Does anyone have any suggestions for an alternative?
