Ingredients:
1 lb cube steak (what is cube steak? See below)
2 cups whole milk
1/2 cup heavy cream
1/4 lb country sausage
4 tbsp butter
6 tbsp flour
Salt
Pepper
Flour
Oil
Eggs
What is cube steak:
Generally top sirloin or top round beat flat with a meat tenderizer. My store sells prebeat cube steak, if yours doesnt, use top round/sirloin
Directions:
Gravy:
Cook the sausage in a large sauce pan over medium-low heat. One cooked, spoon out of the pan, you want to leave as much sausage grease in the pan as you can.
After sausage has been removed, add the butter and let it melt. Once melted, sift flour over the pan and stir to combine. The mix should be smooth and without clumps. If there are clumps, add butter 1 tbsp at a time until they go away.
Cook over medium low heat for 7 minutes or so (you want to cook out the raw flour taste)
Warm milk to about room temp, same with cream. Slowly add milk, 1/2 to 1/4 cup at a time, mixing to fully combine before adding more.
Once all the milk/cream is added, stir the sausage back in and salt/pepper to taste. Cook for 5 minutes or so, letting the sausage flavour be picked up my the gravy.
Steak:
Beat 4 eggs in a large mixing bowl. In another bowl mix flour/pepper.
Take a cube steak and coat it in flour, completely cover it. I like to put flour on top of it too and then press down to coat it.
Dip it in the eggs, again making sure its fully coated.
Repeat flour egg flour (total of 3 coats of flour)
In a large sauce pan, heat 1 inch of oil.
Pan fry tthe steak until its golden brown on one side, flip, and fry the other side.
