With just over 2 weeks to plan and shop, what are your Christmas dinner recipes?

I'll share first. A fairly simple variation on Waldorf Salad.

  • 3 big red delicious apples, cored and cut into small cubes.
  • About a cup of celery, cut into thinnish slices.
  • Half a cup of crushed, toasted walnuts.
  • Half a pound of cubed ham
  • Maybe 6 or 7 tablespoons of mayonnaise
  • A teaspoon of lemon juice
  • Salt and pepper to taste.

Someone in the family will usually make this or a variation thereof for the Christmas Eve dinner. I'm not sure why that's the only time we eat this.
