Alright gang strap in heres what you need for 2-4 servings
1 Chicken breast (you can do 2 or 3 if you like but I'm not a big chicken fan)
4 tablespoons of Olive Oil
6 cups of spinach
1 lemon
3/4 cup of white wine (I like Reisling)
salt and pepper to taste
1 crushed clove of garlic
3 tablespoons of butter
1/2 pound of pasta
Here's the steps!
- Heat up your oil over medium heat in a skillet and cube up the chicken. Once the oil is hot, put the chicken in. Add your salt and pepper.
- Once the chicken is 3-4 minutes away from being done, add in the garlic and the spinach.
- Once the spinach is all wilty add in the juice (and zest if you like a lot of lemon) of your lemon as well as the white wine and the butter.
- Let it reduce down while you cook your pasta.
- Mix it all together and be sure to get some of that dank lemon/wine sauce from the bottom of the pan.
This whole meal takes me less than 25 minutes and it is SO good. Sometimes if I'm feeling fancy and I have them I'll add in some capers, but you can add a whole bunch of different things and make it your own. In all I spend about $3.50 per serving on this, but that'll vary depending on where you live and shop! Reisling from Woodbridge works really well and it's only 5 dollars per bottle where I live.
