White Wine Chicken Pasta (Cheap!)

Alright gang strap in heres what you need for 2-4 servings

1 Chicken breast (you can do 2 or 3 if you like but I'm not a big chicken fan)

4 tablespoons of Olive Oil

6 cups of spinach

1 lemon

3/4 cup of white wine (I like Reisling)

salt and pepper to taste

1 crushed clove of garlic

3 tablespoons of butter

1/2 pound of pasta

Here's the steps!

  1. Heat up your oil over medium heat in a skillet and cube up the chicken. Once the oil is hot, put the chicken in. Add your salt and pepper.
  2. Once the chicken is 3-4 minutes away from being done, add in the garlic and the spinach.
  3. Once the spinach is all wilty add in the juice (and zest if you like a lot of lemon) of your lemon as well as the white wine and the butter.
  4. Let it reduce down while you cook your pasta.
  5. Mix it all together and be sure to get some of that dank lemon/wine sauce from the bottom of the pan.

This whole meal takes me less than 25 minutes and it is SO good. Sometimes if I'm feeling fancy and I have them I'll add in some capers, but you can add a whole bunch of different things and make it your own. In all I spend about $3.50 per serving on this, but that'll vary depending on where you live and shop! Reisling from Woodbridge works really well and it's only 5 dollars per bottle where I live.
