I was recently in NYC and had Very Fresh Noodles’ Very Spicy Dan Dan Mian in Chelsea Market and was wondering if any of you have tried that version of DDM and might know of a similar tasting recipe I could attempt.

But it didn’t have the kick that I liked in the Very Fresh Noodles version. I found the Very Fresh Noodles version pleasantly spicy and numbing, full of umami, and salty (a little more than I’d like but the combination of flavors was more than enough to have me keep eating.)
I’m positive the chili oil (not that spicy) I have can be improved if I use better quality chili flakes and Sichuan peppercorns but I am unsure of how to make a similarly strong sauce with kick.
