Yep, our dodgy summer hasn't let them ripen too well and lots of people are harvesting them this week because they reckon the frost will kill them off. So I made a pretty interesting chutney which is tasty. I've seen lots of conflicting recipes so thought if anyone else has lots to use; they may wish to use this one. Let me know how it goes, hope you like.
Tangy Green Tomato and Apple Chutney/pickle, whatever:
1.4 KG Green tomatoes- Diced
4 Bramley Apples (900g) - Diced
3-400g Onions - Chopped
4 Tiny chillies from my plant, Explosive Ember. Or one good sized Red Chili - Finely chopped.
2-3 Tsp of ground ginger.
1 Tsp each of: Cinnamon, Corriander seed and Nutmeg.
1 Clove (trust me).
2-3 tablespoons of Jam Sugar. - Cheating, but a failsafe. Honestly just save yourself this way.
Around 300ml of white wine vinegar, plus a good squirt of malt vinegar.
500g Light muscovado sugar
3-4 handfulls of Sultanas. - Lightly chopped but some left whole.
2 Pinches of Salt
2 grinds on the old Black Pepper grinder
Add everything BUT the Sugar and about a third of the Vinegar to the preserving pan and heat on medium. Slowly bring the heat up adding in and stirring the sugar, then the rest of the Vinegar after. I find this helps any last sugar crystals to dissolve, and keeps the vinegar tangy.
Bring to a boil, stirring well. Keep it rolling a short time like 4-5 mins. Then bring down to a simmer.
Cook for around 1 hr 45 Mins, or more until thick.
As it cooks stir often and check it's not sticking to the bottom.
Maybe some more spices to your taste for the finish.
Jar it up and enjoy!
It took some boiling down so you could reduce the vinegar amount, but Tomatoes are pretty liquid anyway. Also the sugar could be lessened I'm sure, but not too much because it needs it to set!
