Ingredients
- 2 Bass freshly caught
- 2 cups of cornmeal
- 3 cups of brackish water for soaking
- 2 tsp flour
- 2 tsp salt
- 10 cups of vegetable oil or as much as necessary
Directions
- Clean the fish - descale and leave the skin on. The flavor is in the skin.
- Soak the fillets - gets salt all the way through the fish. It also tenderizes larger fish which might be tough.
- Heat the vegetable oil - use enough to cover the fish.
- Make the batter - cornmeal, flour, and salt. A couple of cups of cornmeal, a couple of tablespoons of salt and flour.
- Test the oil for hotness - drip some water on it and see it dance.
- Batter each fillet and drop them in the oil.
- Cook the fish - it shouldn't take more than a couple of minutes. They should float when done.
- Drain the oil by using a paper towel on a plate.
Now you're ready to eat the fish with a side of hushpuppies, french fries, coleslaw, and homemade tartar sauce.
