My mother's birthday is coming up and I would like to make Ortolan for her, my father and myself. We are German, but all living in the United States are there is no Ortolan here, and there is no way to purchase it live, I've had it once and it an amazing delicacy, definitely extravagant but worth it.
If you're unfamiliar with the recipe, you take the Ortolan, a tiny bird, feed it oats in the dark until it is 4 times it's weight, drown it in Armagnac brandy, roast it for 8 minutes and then eat it whole. What bird that's available in the midwestern United States could be an acceptable substitute?
