Finding recipes for the queen of allergies

Hi All,

My sister has a rare genetic disorder that makes her allergic to basically everything. Like seriously, we don't keep a list of things she can't eat... we keep a list of things she can. As you might imagine, food is very difficult for her, and whenever she stumbles on a new way to combine the 13 foods she can eat it's a very exciting day. Which brings me to my question today:

My sister just had a baby, and as a present for her I thought it would be cool to make a little cookbook of recipes just for her. I need help coming up with recipes made solely with these 13 ingredients:

  • Beef (including rendered beef fat)

  • Salmon

  • Sardines

  • Quinoa

  • Black Rice

  • Chickpeas (including chickpea flour)

  • White Potatoes

  • Lettuce

  • Cocoa Powder

  • Super Dark Chocolate (only occasionally and in small amounts)

  • Safflower Oil

  • White Sugar

  • Salt

Two examples of things we've tried that worked out:

  • Chickpea tamales

  • Dhokla

The food list changes from time to time as she eats one thing too much and then starts reacting to it (for example she used to be able to eat eggs) or when she doesn't eat something for a long time and then can eat it again for a while. My most recent revision of the food list is from about a year ago so I'll check and if anything has changed I'll edit this post.
