Shepherd’s Pie is a real comfort food, ideally for the depths of winter, but really it is great any time of year. The base is a nice mixture of beef mince, onion, carrot, celery, tomatoes & a mixture of herbs. The variation to the traditional version is in the parmesan mash that is added on top. The mash includes parmesan cheese mixed through and well as a generous amount sprinkled on top to allow a wonderful golden colour to develop as it bakes in the oven.
Ingredients:
• 1 tbsp Olive Oil
• 750 g Beef Mince
• Salt to season
• Pepper to season
• 1 Brown Onion diced
• 2 Carrots diced
• 2 Celery Sticks diced
• 4 cloves Garlic crushed
• 1 tbsp Plain Flour
• 1/2 tbsp Ground Paprika
• 1 tsp Ground Thyme
• 1 tsp Ground Rosemary
• 500 g Tomatoes diced
• 1/2 cup Beef Stock use stock cube
Parmesan Mash
• 6 large potatoes peeled and cut into cubes
• 60 g Butter softened
• 2/3 cup Milk
• 1/4 cup Parmesan cheese grated plus extra parmesan to sprinkle on top of mash.
• Salt to season
• Pepper to season
• Thyme Sprigs to garnish
