Hello all,
I'm looking for advice for a 3.5l slow cooker green Thai vegetable curry. I'm not a fan of coconut milk, and yogurt will be too high calorie for the meal I'm planning. I'm looking for a liquid base that will cook the lentils and dilute the green Thai curry paste I have.
My planned ingredients list are;
7 garlic cloves 6 large white onions 8 mixed bell peppers Green Thai curry paste 4-500g red split lentils
In my usual chili recipe I use passata as a base, but that won't work here.
Could I maybe use a chicken or beef broth? A lot of liquid will be incorporated from the onions and peppers, so I only want to use enough to properly cook the lentils and make a thick sauce.
